Leeroys Creme Brulee Recipe
Hello Readers my name is Leeroy and today I will be giving you a recipe for a crème brûlée.
Ingredients
- 2 cups heavy cream
- 1 vanilla bean, split and seeds scraped (or 1 tsp vanilla bean paste/extract)
- 6 large egg yolks
- ½ cup granulated sugar, plus extra for the topping (about 1 tbsp per ramekin)
- Pinch of salt (optional)
Equipment
- 4-6 ovenproof ramekins (about 6 oz each)
- A large baking dish (for the water bath)
- Kitchen torch or oven broiler
Instructions
- Preheat Oven & Prep: Preheat your oven to 325°F (163°C). Place the ramekins in a large baking dish. Start a kettle of water boiling for the water bath.
- Infuse the Cream: In a medium saucepan, combine the heavy cream, vanilla bean seeds and pod (if using a pod), and salt. Heat over medium heat until it is hot and small bubbles start to form around the edges (do not boil). Remove from heat, cover, and let it infuse for about 15 minutes.
- Whisk Egg Yolks and Sugar: In a separate medium bowl, whisk together the egg yolks and ½ cup sugar until well blended and the mixture lightens slightly in color.
- Temper the Eggs: Slowly stream about a quarter of the warm cream mixture into the egg yolk mixture while whisking constantly. This prevents the eggs from scrambling. Then, slowly pour the tempered egg mixture into the remaining cream in the saucepan, whisking gently until fully combined.
- Strain and Fill: Strain the entire custard mixture through a fine-mesh sieve into a large measuring cup or a bowl with a spout to remove any potential lumps or vanilla bean pieces. Pour the mixture evenly into the prepared ramekins, filling them nearly to the top. Skim any foam off the top.
- Water Bath: Carefully pour the boiling water into the large baking dish (around the ramekins), making sure the water comes about halfway up the sides of the ramekins. Be careful not to splash any water into the custard.
- Bake: Carefully transfer the baking dish to the oven. Bake for 30-40 minutes, or until the edges are set but the centers still have a slight jiggle when gently shaken.
- Cool and Chill: Carefully remove the ramekins from the water bath and let them cool completely to room temperature on a wire rack. Once cool, cover and refrigerate for at least 2 hours, or up to 3 days, until thoroughly chilled and set.
- Caramelize the Top: Just before serving, pat the tops of the custards dry with a paper towel if there is any moisture. Sprinkle an even, thin layer of granulated sugar over the surface of each custard. Use a kitchen torch to melt and caramelize the sugar until it forms a deep amber, crunchy top. Alternatively, place them under a hot broiler for a few minutes, watching closely to prevent burning.
- Serve: Let the caramelized sugar harden for a minute or two, then serve immediately.
In conclusion you should have A perfect crème brûlée with a, brittle, caramelized sugar top that cracks when tapped, revealing a cold, creamy, and smooth custard beneath that is softly set and has a “jiggle” like a thick pudding, but should not be liquidy or firm like a cake
Film Festival Sore Winner 2025
Today I’m talking about the movie Sore Winner.
I think this movie is really good, it is based off real life events that happen to some people when they win, what this story is basically saying is that, if you don’t want to be a sore winner you have to win with a good attitude, otherwise you will get other people upset which might get you hurt, as in the movie.
I really like how in the movie there isn’t much shaking which makes this movie really enjoyable, also the audio is good, which is crucial to make a good movie.
The things that could be improved is that the actors are laughing most of the time, which makes me think that the acting is not that great but considering its an intermediate school making this movie, it was really good. The editing in the movie wasn’t too bad but could be better.
Leeroy’s Week Recount
Hello my name is Leeroy Baxter, and today i will write about how my week is.
This week we learned about the perimeter and area of various shapes such as squares, rectangles, and triangles, we also learned about the Radius, Diameter, and circumference of a circle.
The most fun thing I did this week was helping Matua Joel teach the kids at taster how to draw a pukana face in Art class, or maybe at break times when I talk with my friends and play with sports balls.
The hardest thing we had to learn this week was probably the Radius, Diameter and Circumference of a circle all though it wasn’t that hard it was definitely the hardest thing to learn this week, I learned that PI is 3.14 because the diameter fits 3.14 times in any circle
The most special thing that happened this week was probably when I ate a custard cream donut that made me feel good because it was super delicious.
I showed the school values this week by being respectful to my friends and talking to them with nice words, also by being helpful to the year 6s at tasters by telling them how to fold the paper, and being kind to them.
In conclusion I think I have had a challenging week, but I still think I had a good week.

Hello my name is Leeroy and in this blog I will be talking about my week
This week has been alright Monday was pretty chill and it went by fast, Tuesday I didn’t go to school because my shoulder was in pain and it still is, Wednesday went kinda like Monday as it was chill and fast, Thursday was alright it was a little long but is was all good also on Thursday we had an gender split assembly the girls went into the auditorium and the boys went into the gymnasium, we learned a new waiata and new moves that went with it, it was pretty fun but I got distracted and I got in trouble, on Friday I had to go to Ripeka because I was silly in Kapa Haka, I had to write ten lines of our school karakia, that was not fun at all.
This week we had a big recap of what we learned about last term and it was pretty easy in my opinion.
The hardest thing to learn today was probably the fractions that we did although it was easy I think it was the hardest thing to learn.
I showed the school values this week by finishing most of my work.
My favorite teacher this week was Matua Anthony as always because he is very funny and always knows exactly how to help and solve problems.

Pretending to be someone you’re not isn’t something to be proud of because you are just hiding your true self. The story says What we pretend to be can become who we are — but our nature always finds us.
- Can changing your appearance really change who you are inside?
No, I don’t think changing your appearance can change who you are inside because I feel like the only way to change who you are inside is by trauma.
- Do you think the villagers treated the wolf fairly? Why or why not?
Yes and no because before he wore the boots, they treated him poorly but since he changed his appearance they also changed their opinion on him. But changing himself also helped him prove what he was worthy of.
- Have you ever felt like people didn’t see the real you?
No, because I always act like myself.
- How did the wolf prove his kindness in the end?Helpling the lady find her sheep. And not worrying how they would see him afterwards.
- What would you do if someone dangerous asked for your trust?
Wouldn’t be okay with it from the start but i was thinking what if the “dangerous” person was just misunderstood and people made rumors or judged him or her.
- Why do you think the wolf gave up the boots?
Not because they were toor but because with or without the boots he knew he changed for the better .
- Can people (or animals) change their nature? Explain your thinking.
Yes I do if they hang around the right people or animals they can change the way they think or act.
- How do you decide who to trust?
if i’ve known them for a while i’ll expect them to trust me and for me to trust them. Or I tell them something . and if they ruin their chances then i can’t trust them more than once.

No matter what people think of you , you should never let the others ruin your true self and don’t let others opinions ruin ur opinion on yourself

My Weekend
Hello my name is Leeroy and today I am going to tell you about my weekend
On Friday when I got home from school I took a shower with a speaker so I could listen to some songs while I was showering. It was a good shower. Once I was done with my shower I went out of the bathroom and went to my room to put some clothes on, after I got dressed I went to get a snack before I started playing video games with my friend Isaac and his brother Adam, we played for hours, at around six pm Isaac, Adam, and I were talking about me going over to their house, we talked for a while before me asking my mum if she could drop me off, I asked her and she said yes so I was very happy, we left and since I didn’t eat dinner we got Mcdonalds on the way, we got a share box that me and my brother shared, I got a big mac, a cheeseburger, two drinks, and two fries. I ate it all once I got to Isaac and Adam’s house, it was so delicious. Then I plugged in my Xbox and started playing video games again. We played for like an hour, then we went down stairs and made some tortilla chips. They tasted amazing. We went back upstairs with the chips in a bowl and played Rainbow Six Siege. We pretty much played Rainbow Six Siege for the rest of the night before going to bed and getting some sleep.
On Saturday when I woke up in the morning I went to the toilet and went to play video games again because I was the first one to wake up. Once Isaac and Adam woke up their mum said we were going on a walk to Westmere lake so we got ready and left to go to the lake, on the way we stopped to get some eggs, the we went to the lake, we hopped out the car and started walking around the lake, we played tag along the way, then we reached this bench so Isaac Adam and me sat on it, me and Isaac left and
kept walking around the lake while Adam stayed on the bench, we walked for a bit before running back to the bench where Adam was, he was watching a movie on his phone he gave me an earbud so I could listen and watch the movie with him then his mum yelled out to us and said to come back to the car once we got back to the car we drove to my house and they dropped me off I got home and had a shower then ate and played video games for the rest of the day.
On Sunday literally all I did was sleep and play video games so that day was fun but boring.
And that pretty much sums up my weekend. I think it could have been better but overall it was a good weekend.
My Week
Hello my name is Leeroy Baxter and in this blog I will tell you how my week has been.
On monday and tuesday I wasn’t at school because of an incident that happened on the friday before. On monday I was grounded and I didnt do anything besides chores, on Tuesday I asked my mum if I could have my devices back if I cleaned the whole house she said yes so I folded all the washing and put it in the cupboards. After that was done I did the dishes which took like 10 minutes because there was a lot to wash, then I cleaned the shower and the toilet, which took like 20 minutes. After that I had to vacuum the living room, the kitchen, the hallway, my room, my mum’s room, and my brother’s room which took 25 minutes.
This week we started learning about common factors which was easy once I understood it, we also learned about single digit division which also was pretty easy.
The funnest thing I did this week was go on break and play football, also talking with my friends Isaac, Ella, and Te Wai.
The hardest thing we had to learn this week was maths, we had to learn common factors. At first I was confused but once my friend Te Wai explained it to me it was very easy.
I showed the school values this week by finishing my work, it was hard but I ended up finishing all of it.
My favorite teacher this week was probably Matua Anthony because every time there was a problem he always fixes it and he always tries to help. For example Matua Anthony helped me with a question that I was stuck on in writing, he explained it to me and it made me feel happy.
In conclusion, I had an alright week, because I had some ups and downs.
